Order Cumin


Cumin is used alot in Indian cooking, and is added to pickles and chutneys. It is also used in bread making, and in small quantities adds a defined and balancing flavour to home-baked bread. It is an ingredient in our Moroccan Tagine Spice, and our Mexican Chilli Powder, and it is cumin that gives chilli-con-carne its distinct flavour. It compliments carrots (as used alot in Moroccan food), squashes, cauliflowers, potatoes (such as in the Indian dish jeera aloo); mix with mint to flavour lamb, or with yoghurt and cucumber for a refreshing dip.

Order Coriander

The leaves or the seeds of the coriander plant can be used in cooking.
LEAVES
Often called cilantro, coriander leaves are used in many recipes, especially Asian, Middle Eastern, Mexican and Peruvian dishes. For the best flavour fresh leaves should be added no more than five minutes before the end of cooking. Dried coriander does not have the same strong aroma as fresh, but the flavour is still retained to quite a high degree. They are also best added towards the end of cooking, and I add the dried to steamed rice and my saffron rice as I prefer the more subtle flavour. SEEDS
Coriander seed is an incredibly useful spice, as it balances flavours well, and can bring a dish together. It can save a dish if you’ve added a bit too much of a strong flavour (add twice the amount of coriander for the amount of the other ingredient you’ve used). I would much prefer to put coriander seed in apple pie than I would cloves, and I have seen apple & coriander ice cream! Try using it in making marmalade, or use it with lemon juice in fish dishes.

Make Celery Salt

Celery salt is incredibly easy to make, and it is much better to make it yourself with celery seeds (which have lots of other uses) and salt (which most people will have in their cupboard). Mix 1 part celery seeds (lightly crushed) with 2 parts sea salt. That's it. No really!

Order Celery Seeds

The celery seeds used in cooking are gathered from wild celery rather than the celery we have developed for farming. Their refreshing flavour goes well with cheese, eggs, tomatoes and potatoes. I mix a few celery seeds with garlic powder, some dried mixed herbs, a little paprika and some dried breadcrumbs to sprinkle over potatoes or other vegetables with oil (plus some chopped onions too) before I roast them. Using celery seeds in salad dressings adds a great shot of flavour, and they compliment the creamy flavours such as in potato salad, coleslaw and mayonnaise dressings. Celery seeds are also used to make celery salt.

Order Cloves

Cloves are unopened flower buds that have been dried and as you look at them closely this becomes evident. They should be used sparingly as they have a very strong flavour but a little amount can be added to sweet dishes such as apple pie and fruit cakes, as well as savoury dishes such as a glazed ham, and you could add a pinch of clove powder to gravy to add a warming flavour. Clove powder is an ingredient of quatre-epices, the French ‘four spice’, which is used to give depth to meat dishes.

Order Allspice

Allspice (sometimes called pimento) is the dried, unripe berries of a tropical tree native to parts of South America. It was called allspice (even though it is a single spice) as it is reminiscent in flavour and aroma to many of the spices that were known to the Spanish who found the dried berries being used in the Americas, such as cloves and cinnamon. It is used alot in sweet dishes, and can be used as a substitute for cloves if that flavour is too strong. It is used in pickling, jam making and mulling, and is a great ingredient in BBQ mixes. It is used alot in Jamaican recipes, and in mixes for marinading chicken, meat, fish and seafood. Mix with ground black pepper to create a softer, aromatic table pepper.

Order Cinnamon & Cassia

Cinnamon is a fragrant and versatile spice, that can be utilised in a variety of sweet (and some savoury) dishes, like bread pudding, rice pudding, porridge, hot chocolate, biscuits and cakes. It also compliments most fruits, so it is great with fruit cakes such as banana bread (with bits of milk choc...mmmm) or carrot cake. It is the main ingredient in our pudding spice. Try cinnamon toast, just slightly butter warm lightly toasted bread, sprinkle cinnamon & sugar to taste, and toast for approximately 20 seconds more. My eldest son makes warm milk with a couple of pinches of cinnamon and honey to sweeten, he drinks it by itself, but it would also be lovely over corn flakes, or other cereal.

Cassia is similar to cinnamon but with a more penetrating, pungent flavour. Due to this it compliments stronger flavours as it will not so easily be overpowered and savoury dishes as it has a more bitter flavour. You can mix the two spices 50/50 for the best of both worlds. Some cassia is packaged as Chinese Cinnamon, which is misleading, as cinnamon is generally more expensive, and ignores that cassia has its own characteristics and is not just cinnamon's cheaper substitute.
