The celery seeds used in cooking are gathered from wild celery rather than the celery we have developed for farming. Their refreshing flavour goes well with cheese, eggs, tomatoes and potatoes. I mix a few celery seeds with garlic powder, some dried mixed herbs, a little paprika and some dried breadcrumbs to sprinkle over potatoes or other vegetables with oil (plus some chopped onions too) before I roast them. Using celery seeds in salad dressings adds a great shot of flavour, and they compliment the creamy flavours such as in potato salad, coleslaw and mayonnaise dressings. Celery seeds are also used to make celery salt.
